Red Witch is a semi-hard Swiss cheese made with raw cow's milk. The rind is rubbed with spicy paprika which gives it that ruby red color and its playful name. It's creamy and buttery with a slight nuttiness common to Alpine cheeses. The gentle spice of the paprika adds warmth and the mellow earthiness rounds it out. It's festive and flavorful yet approachable and fun to snack on. Great with rustic sourdough bread and spicy salami... it also makes a fun alternative to Raclette.
