Beemster Classic is made with pasteurized cow's milk in Northern Holland. This Dutch Gouda is aged for 18 months, and that age really comes through on the flavor. It has a deep, nutty richness, with hints of caramel and a sweetness that's balanced by its savory sharpness. It's firm with a little crumble, and those wonderful crunchy crystals. A lingering toasty, almost butterscotch-like finish makes it complex yet still approachable. Serve with your favorite fruit and nuts and maybe a little honey. Pairs well with bold Cabernet Sauvignon's, oaked Chardonnay's or your favorite Bourbon.
