Our 6 month, pasteurized Manchego is made with 100% sheep's milk in the La Mancha region of Spain. Firm but creamy, Manchego 6 month offers a nice balance between a milky young cheese and it's firmer, sharper, older brother. It's complex and balanced with a sweet, buttery, toasty flavor. A popular choice for cheese boards, but versatile enough for salads and vegetable dishes.
Pairs well with acacia honey, red wines like Tempranillo and fruity rosé.
