Made in Holland and named for the Canals- Kanaal is very unique as it's not just a Gouda but a cross between a Gouda and Parmesan. Although it's made in the same method Gouda's are made, it's flavor profile, aroma and texture all scream Parmesan. It's sweet and salty with notes of toasted caramel and butterscotch that linger and become rich, denser and more candy like with age. Kanaal is great on its own, but worth trying along toasted nuts, dried apricots, figs and dark chocolate. Yes! Chocolate!!!
