This classic cheese from the Emmental Valley in Switzerland, is made with raw cow's milk and known for its signature large, round holes called eyes.   Its mild and nutty with a slightly butter aroma and a hint of sweetness.    It melts beautifully making it the perfect cheese for au gratin dishes and fondue. But it's also delicious on its own.
