Beemster Vlasskas is the youngest of our Beemster Gouda's. Made with pasteurized cow's milk and aged 12 months, it's buttery with a sweet-milk flavor, notes of almond and a touch a sharpness. It's easy to melt making it great for a grilled cheese sandwich. It's good in mac & cheese too! Pairs well with fresh apples and figs.
A little-known fact, Vlasskas was historically only made once a year during the flax harvest festival but as the festival fell away the recipe was lost. Thankfully, in 2004 the recipe was rediscovered - obviously too good to make only once a year Vlaaskas is now made year-round.
